Wines of the Baix Gaià
Vineyards and winemaking:
ineyards located in Nou de Gaià, Tarragonès municipality about 4 km in a straight line to the Mediterranean. The soils are franc-sandy of low fertility. The grapes will work perfectly thanks to a warm and marinated climate.
Once the grapes are harvested, it is melted and pressed. With the must fill stainless steel tanks, leaving it cool for 12-24 hours. Then we separate the clear part of the must of the cloudy part (process of defrost). With the net must, we inoculate yeasts to start the fermentation. The fermentation duration is about 12 days at a temperature of 14-16ºC. Once the fermentation is finished, the wine remains in tanks and it is subjected to periodic transfers until bottling. The proportion of varieties in the blend is 65% Xarel.lo and 35% Macabeu.
