Vineyards and winemaking:

V ineyards located in Nou de Gaià, Tarragonès municipality about 4 km in a straight line to the Mediterranean. The soils are franc-sandy of low fertility. The grapes will work perfectly thanks to a warm and marinated climate. Once the grapes are harvested, they are destemmed and macerated with a cold maceration of the grapes at 7ºC. After the maceration, the separation of the must (bleeding), the settling process and a slow fermentation at a low temperature (14ºC) are made. The duration of fermentation is about 15 days at a controlled temperature. After fermenting, it remains in stainless steel tanks, and undergoes periodic racking until bottling, where the second fermentation takes place in the bottle, with a minimum ageing of 12 months on the Lees. After this time, it comes to the disgorged and cover with the definitive cork.

Tasting notes:
C ava of a great aromatic intensity and freshness. Clean aromes of floral and red fruit (strawberry, raspberry) that melt in an elegant texture with long and balanced post flavor
Ideal for snacks or accompanying cold starters. Ideal for rice, mild meats or desserts with fruit or Black chocolate.
The optimum consumption temperature is 6ºC.
